Winter 2004/2005

Pumpkin spice muffins

Bake a batch to serve a crowd or to save for a quick breakfast or snack. Makes 18 muffins.

Ingredients

  • 2 cups whole wheat flour
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 2 eggs, beaten
  • 1 cup pumpkin puree
  • 1/4 cup sugar
  • 2 cups unsweetened applesauce
  • 2 tablespoons canola oil
  • 1 teaspoon almond extract

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Mix together the flour, baking soda, cinnamon, nutmeg and baking powder in a medium bowl.
  3. Combine remaining ingredients in a large bowl.
  4. Slowly add the dry ingredients to the large bowl until just blended. Do not over beat.
  5. Pour the batter into 18 non-stick muffin cups and bake for 25-30 minutes.
  6. Remove muffins from the oven and let cool slightly.
  7. Remove the muffins from the pan and let cool completely.
