Pork roast

This roast seems like comfort food. But there's not the heavy-duty fat and calorie overload that comfort food often brings. Serves 11.

Ingredients

1 2-pound lean boneless pork rib roast or loin roast, all visible fat removed
1 teaspoon prepared horseradish
1/2 teaspoon dried marjoram, crushed
1/2 teaspoon dried basil, crushed
1/2 teaspoon dried oregano, crushed

 

Directions

  1. Pre-heat oven to 350 Fahrenheit.
  2. Place pork roast in a shallow baking pan. Rub horseradish over the surface of the meat. Set aside.
  3. In a small bowl, combine remaining ingredients. Sprinkle over roast
  4. Place roast, uncovered, in the oven. Cook about 1 hour, or until a meat thermometer registers 160F. Let stand 5 minutes. Slice to serve.
