Grandma's apple crisp

Enjoy some heart-smart comfort with this classic dessert.

Ingredients

Filling

3/4 cup apple juice
12 packets Equal® or 3 1/2 teaspoons Equal® sweetener for recipes
1 tablespoon cornstarch
1 tablespoon grated lemon peel
4 cups sliced, peeled apples

Crispy topping

1/4 cup all-purpose flour
8 packets Equal® or 2 1/2 teaspoons Equal sweetener for recipes
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
3 dashes ground allspice
4 tablespoons reduced-fat margarine, cut into pieces
1/4 cup quick-cooking oats
1/4 cup flaked coconut


 

Directions

  1. Combine apple juice, Equal®, cornstarch and lemon peel in medium saucepan.
  2. Add apples and heat to boiling, then reduce heat and simmer, uncovered, until juice is thickened and apples begin to lose their crispness (about 5 minutes).
  3. While apples are simmering, make crispy topping. Combine flour, Equal® and spices in a small bowl. Cut in margarine with pastry blender until mixture resembles coarse crumbs. Stir in oats and coconut.
  4. Arrange apples in an 8-inch square baking pan.
  5. Sprinkle crispy topping over apples.
  6. Bake in preheated 400 Fahrenheit oven about 25 minutes (until topping is browned and apples are tender).
  7. Serve warm.
